Ricotta Salata (salted ricotta) is an Italian cheese made from Sheep’s milk, which is reheated (hence the name – ricotta means “recooked”) pressed, salted and aged for at least 90 days.
Sometimes called “Italian feta cheese” because of its crumbly semi-firm texture and a salty flavour.
