Pecorino Romano is a hard, salty cheese made from sheep’s milk produced in Lazio region (central Italy).
It has a distinctive aromatic and pleasantly sharp taste. As Pecorino ages, it develops a brittle, hard texture, and the rind yellows. Similar to its cousin Parmigiano Reggiano, it’s a hard, dry cheese perfect for grating.
