Rougie ducks are raised free-range without hormones or antibiotics and fed only Quebec grown corn.

Incredibly flavourful with a rich, silky mouth feel that transforms whatever it touches. It is an excellent gourmet alternative to common cooking fats – it contains more monounsaturated and polyunsaturated fat than butter. It is ideal for searing, roasting, grilling, confit and also in gravies and pastries, or added to potatoes or vegetables for an elevation in flavour and taste.

The best roast potatoes recipe:

Boil your potatoes – already peeled and cut – for about 6 minutes; then drain in a colander and leave to steam dry for 2-3 minutes. Return the potatoes to the pot, add a tablespoon of Semolina and give them a good shake together – this will help make your roast potatoes super crispy. Put some duck/goose fat into a hot roasting tin (preheated in the oven at 190ºC) and heat it in the oven for a few mins, so it’s piping hot.

Carefully put your potatoes in the hot roasting tin and return to the oven for 35 to 40 minutes until cooked to your liking (remember to turn the potatoes after 20 min for a uniform cooking).

Move your crunchy roast potatoes to a plate lined with kitchen paper and drain off the excess fat, then serve whilst piping hot.
