What comes to mind when you think of mozzarella? That perfect porcelain globe, that pristine white sphere that is so succulent and tasty, delicious in every way.

Mozzarella di Bufala is a soft and rindless Southern Italian cheese made from buffalo milk.

It has a roundish shape, with an extremely thin skin and smooth surface. The paste is made up of thin layers and has a slightly elastic consistency for the first 8-10 hours after production, eventually becoming softer. The flavour is delicate, with a hint of musk that is reminiscent of lactic acid fermentation. It is creamier and more tasty than cow mozzarella because buffalo milk has more fat and proteins
