150g Chef’s Delight Traditional Basil Pesto*
250g Mamma Lucia Mascarpone Cheese*
200g Grated Parmesan Cheese*
400g Penne Pasta*
½ tsp Salt
¼ tsp Pepper
2 cups Grape or Cherry tomatoes halved
Fresh Basil Leaves
- In a large saucepan, cook penne according to directions on packaging, then drain and immediately return to saucepan.
- Scoop the Mamma Lucia Mascarpone Cheese over the pasta in the pan.
- Stir in the Chef’s Delight Traditional Basil Pesto and cook over a medium heat, stirring for about 5 minutes until the sauce has thickened.
- Season with the salt and pepper.
- Stir in fresh tomatoes and serve sprinkled with Grated Parmesan Cheese
- Garnish with fresh basil
