Pomodori tondi (round tomatoes) are used to make this passata, because they are less watery and with a smoother texture.
After being washed and cooked, the tomatoes go through a special machine called passatrice, that separates the pulp from seeds and peels. The puree is then bottled and pasteurized.

This product can be diluted with water to make a juice, or vodka, for a cheeky Bloody Mary. Or it can also be used as it is to make a great tomato-based sauce.
