PECORINO BIANCO SARDO
This pasteurised sheep’s milk cheese has a gorgeous pronounced basket rind.
Aged a minimum of 6 months, it is rich, it is buttery and sharp without being too salty.
It is fantastic for grating and can be used as a substitute for Pecorino Romano.
You can pair it with fresh fruits and honey. If you want to keep things simple, you can try it by itself or with a drizzle of extra virgin olive oil.
