| Tiramisu |

| Ingredients |
6 eggs
2 cups espresso coffee (strong)
10 tbsp sweet marsala
500g mascarpone cheese
500g savoiardi (Lady sponge fingers)
6 tbsp sugar
cocoa or grated chocolate

| Method: |
In a small bowl beat egg yolks and sugar together, once well mixed add mascarpone cheese and egg whites (which have been beaten until stiff). Stir he mixture gently until combined.
In another bowl mix the espresso coffee with the brandy or marsala then dip the savoiardi (lady sponge fingers) into the mixture one at a time until well coated. |
Serving The Dish |
Arrange in a serving dish and layer with the mixture of egg, sugar and mascarpone then sprinkle with cocoa or grated chocolate.
Refrigerate for at least one hour before serving.
Tiramisu can be frozen. |
