Fennel and Mozzarella Salad
Ingredients
  • 1 large fennel bulb, finely sliced
  • 2 buffalo mozzarella or 4 bocconcini, sliced
  • ½ cup basil leaves
  • 1 Tbsp mint leaves
  • 1 bunch chives, chopped
  • 1 Tbsp salted capers, rinsed and drained
  • 1 Tbsp white wine vinegar
  • 3 Tbsp olive oil
  • Method:
    Toss together the fennel, mozzarella, basil, mint, chives and capers. Drizzle with the oil and vinegar. Serve immediately
