| Fennel and Mozzarella Salad |

| Ingredients |
1 large fennel bulb, finely sliced
2 buffalo mozzarella or 4 bocconcini, sliced
½ cup basil leaves
1 Tbsp mint leaves
1 bunch chives, chopped
1 Tbsp salted capers, rinsed and drained
1 Tbsp white wine vinegar
3 Tbsp olive oil | |
| Method: |
Toss together the fennel, mozzarella, basil, mint, chives and capers. Drizzle with the oil and vinegar. Serve immediately
